March Mango Madness

According to the food network mangos are in season!
Feeding Fre(e)nzy is interested in discovering your favorite uses for mangos. Submit your recipes by April 3rd including the required ingredients that can be purchased via NetGrocer.

Mango Sorbet

Ingredients
2 lbs mango pulp
1/2 tsp lemon juice
grated rind of 1 orange and 1 lemon
4 egg whites whisked until peaks form
1/4 cup superfine sugar
1/2 cup whipping cream
1/2 cup confectioners sugar

1 In a large chilled bowl mix half of the mango pulp withthe lemon juice and the grated rind.

2. Gently fold in the egg whites and the superfine sugar. Cover with plastic wrap and place in the freezer for at least 1 hour.

3. Remove and beat again. Transfer to an ice cream container and freeze until fully set.

4. Whip the cream with the confectioners sugar and the remaining mango pulp. Chill the sauce for 24 hours. Remove the sorbet 10 minutes before serving. Scoop out individual servings and cover with a generous helping of the mango sauce.

Wonderfully refreshing after a spicy meal or by itself on a hot summer evening.
